Today I am sharing a Spiced Chipotle Quinoa Bowl recipe.

Quinoa is one of my favorite grains and can be added to so many dishes. During weeknights you want meals to be easily prepared and nutritious for the family and quinoa definitely does just that. You can make a big batch early on in the week and you have instantly given yourself quick meal options.

The kiddos devour it too!

This came together one day when I was strapped for some time and needed to get a meal on the table. I generally have various vegetables on hand at all times and found that the cauliflower and sweet peppers worked well together in this dish while the beans provided a bit of a crunch.

The addition of the black bean burgers gave the meal another layer of Chipotle flavor, which was pleasing as well.

This bowl is yummy and fills your belly in a flash.

Spiced Chipotle Quinoa Bowl

Spiced Chipotle Quinoa Bowl

A quinoa bowl packed with plant-based protein.

Ingredients

  • 2 cups cauliflower cut in bit sized pieces
  • 1 can garbanzo beans drained & rinsed
  • 6 mini sweet peppers
  • 1 cup dry quinoa
  • 2 black bean chipotle veggie burgers (I used Earth Grown Vegan - Aldi) crumbled
  • 1 tsp of chili powder
  • 1 tsp of cumin
  • Salt & Pepper to taste
  • Extra Virgin Olive Oil
  • fresh lemon juice

Instructions

  1. Preheat oven to 450 degrees.

  2. Prepare baking sheet with parchment paper.

  3. Pat garbanzo beans dry and place on baking sheet. Add the cauliflower and mini peppers.

  4. Cover with chili powder, cumin and salt & pepper to taste. Drizzle with olive oil and toss with hands to evenly coat.

  5. Cook in oven for 30 minutes.

  6. Prepare quinoa according to package. (or 2 cups water to 1 cup dried quinoa, boil, cover, lower heat and cook 15 minutes)

  7. Heat veggie burgers on a pan and crumble as they cook. Set aside.

  8. When sheet pan is done, pull out and coarsely chop your mini peppers making sure to remove the stems.

  9. Prep bowls: add quinoa, a portion of the cauliflower, the chickpeas, peppers and veggie burger crumbles. Top each bowl with a generous amount of fresh lemon juice.

  10. Serve.

Recipe Notes

This can be topped with freshly prepared Chile salsa or favorite jarred option.
